Why Gaburi Chicken is Popular | Behind the Scenes of Our 14-Year Beloved "Signboard Dish"

Serving Takadanobaba for 14 years (opened July 2012).

A tavern centered around robatayaki (charcoal grill) and sashimi "Sumiyaki Choja Baba Rock" When it comes to our specialty, it's the signature dish that all our staff proudly recommend, "Gaburi Chicken (whole grilled chicken)" .

Using half a chicken boldly and carefully prepared over two days, this dish continues to captivate many customers just as it has since our opening.
In this article, we'll introduce the preparation behind the scenes that you don't usually see, complete with photos.

🐔 A Dish Starting from Carefully Selected "Domestic Young Chicken"

What we use for Gaburi Chicken (whole grilled chicken) isabout 400g of domestic half young chicken。
Focusing on freshness, it all starts with sourcing it in a chilled state.

First is "marinating" in our special marinade.
This determines the depth of flavor and moist texture.

▼ Marinade Ingredients

  • Salt (draws out excess moisture and concentrates umami)
  • Grated ginger (eliminates odor)
  • Black pepper & white pepper (contours the flavor)
  • Kombu tea (refined umami)
  • Celery leaves, onions, carrots (for aroma)

Tossing these lightly, combining with the young chicken, andmarinating in the refrigerator for a full day.がぶり鶏の仕込みで吊るされた国産ひな鶏。炭焼きの余熱で旨味を凝縮させる工程。<br />

After marinating for a full day, Gaburi Chicken moves to the "drying" process where it is hung over residual heat. This deepens the umami even further.

🔥 Concentrating Umami with Hanging Roast. A Serious Two-Day Finishing Process

The next day, the chicken taken out from the marinade is hung above the irorifirepit.
This "hanging" method is the biggest feature of Gaburi Chicken (whole grilled chicken).

▼ Benefits of the Hanging Process

  • Excess moisture and fat slowly drip down
  • Far-infrared rays firm up the meat and intensify the umami
  • Visually striking and incredibly fun

Gaburi Chicken is carefully grilled near charcoal firefor about 25 minuteswhile closely monitoring the heat.
With its impressive hanging appearance and the aroma of charcoal, it's a signature presence that catches everyone's eye in the restaurant.
